RESEP/RECIPE : Nastar / Pineapple Jam Cookies


Sempat posting foto ini di Path dan Facebook, yang berkomen kebanyakan teman-teman yang asalnya dari Indonesia bagian timur (baca : Ambon, Manado, Makassar). Entah kenapa Nastar model daun ini beredar or dikenal di Indonesia timur aja. 

Jadi inget pas jaman kuliah, tiap natal pasti balik ke Ambon untuk merayakan dengan Mama-Papa-Kakak-Adik. Ngga lengkap kalo pulang ke Jakarta-nya tanpa Nastar ini di dalam salah satu box makanan :-) Pernah nawarin ke salah satu teman yang kebetulan main ke kost, temen saya itu sempat bingung saat melihat bentuk Nastar yang 'aneh' ini.

Kalo jaman kecil dulu, malah saya bilangnya 'Kue Daun'. Ternyata ya.. bukan hanya jaman kuliah, sampe kawin dan punya anakpun, di saat pulang kampung ke Ambon ataupun Jakarta (setelah tinggal di negara orang) pasti bawaannya adalah Nastar ini. Dan karena kami seneng banget sama Nastar ala Oma Niette ini, pasti deh kalo kita dateng, dengan senang hati dibuatnya.. from scratch loh ya! Saya pun terbiasa kalo bikin Nastar bikin sendiri Selai Nanas nya.

Selai Nanas / Pineapple Jam

Ingredients :

2 Pineapples (Big)
200 g Sugar
2 Cinnamon Sticks
1/2 tsp Ground Cinnamon

Method :

Peeled the Pineapple including the eyes. Slice and blend with the blender until you get a smooth mixture.

Add Sugar, Cinnamon Stick and Ground Cinnamon and stir to combine.

Cook until you get dry and thick mixture, and the colour turn into brown.

Nastar

Ingredients :

700 g All Purpose Flour
100 g Sugar
250 g Butter
250 g Margarine
30 g Corn Flour (Maizena)
4 Egg Yolk

Egg Wash :

1 Egg
1 tbsp Water

Method :

Preheat oven to 180°C (160° Fan-Forced Oven). Line 2 baking trays with baking paper.

In a mixer bowl, combine Sugar, Butter, Margarine and Egg Yolk. Add Corn Flour and All Purpose Flour into the bowl and beat using paddle attachment until everything is mixed well.

Roll mixture into ball, make it flat, and put approximately 1/2 tsp of Pineapple Jam in the middle of the flat dough. Cover and shape it like a leaf and you can decorate as you like.

Place on sheets about 1 inch apart. Brush the tops of each cookie with Egg Wash.
Bake in preheated oven till golden, 18-20 minutes.

Let cool and store in airtight container.
